Sambar (Toor Dhal)

Ingredients:

1 cup Toor Dhaal
3 cups water
Mixed vegetables ( finely cut carrots, long beans and potatoes into small pieces)
3 tsp sambar powder
Pinch of tumeric powder
1/4 cup tamarind water
5 dried chillis
1/2 tsp mustard seeds
1/2 tsp fenugreek sees
Curry leaves
1/4 asafoetida
1 onion
Salt

Method:
1) In a pan, add some oil and stir fry mustard seeds, fenugreek seeds, curry leaves and dried chillis together until the mixture gives out an aromatic smell
2) Add onions and stir fry till the onions are slightly brown in colour
3) Add tamarind water into the pan and cook the mixture in the tamarind water
4) Meanwhile, in another pan,  add toor dhaal and water and bring it boil for about 25 minutes until the toor dhaal softens.
5) Add mixed vegetables, sambar powder, asafoetida and tumeric powder let it cook on a medium flame for abt 10 to 15 minutes. If any foams arises (due to excess amt of tumeric powder), remove them using a spoon
6) Pour the tarmarind mixture into the pan that contains the toor dhaal. Add some salt. Cook for another 5 minutes.
