English breakfast

A complete English breakfast can be seen all day at any corner of UK! AS you readers know, though being a vegetarian, I love to cook for my mates/ families.

I believe my photograph speaks for itself.


The tomatoes in particular must be cut into halved and be seasoned with crushed black pepper and salt before frying on both sides

Sweet and sour chicken

Ingredients:

Fried chicken
1 onion sliced largely
1 capsicum diced
Diced pineapple
1 tomato cut

Sauce Mix:
1 tb plum sauce
1 tb tomato sauce
1 tb chilli sauce

Salt

Method:

1. In a pan, add some oil and sauté the onion. Saute well.
2. Add the sauce mix and and sauté well for 2 -3 minutes
3. Add the capsicum, pineapple, and tomato and cook well.
4. Add the fried chicken and salt and cook for another 2 minutes before turning off the stove.

Chicken sambal

Ingredients:

3 whole chicken pieces
Marination mix - Baba fish masala, Baba mutton masala,  3 tb ginger garlic paste)
Grinded sambal paste
Aginomoto
2 -3 onions diced
1 tb grinded onion
1 tb ginger garlic
2 tomatos grinded into tomato puree or 1 small can tomato puree
1 tsp salt

Method:

1) Prepare the marination mix and mix it with the chicken pieces and leave it overnight in fridge.
2) Fry the chicken pieces.
3) In a pan, add sambal and aginomoto and saute well for 10 min until the sambal mixture turn into
    dark red colour.
4) Add the diced onion, grinded onion and saute well.
5) Add the ginger garlic paste
6) Add 1 tsp salt, and tomato puree and cook well.
7) Finally add the chicken pieces and saute well.

Periamma's Malaysian chicken curry

Ingredients:

Chicken pieces
1 onion
2 tomatoes cut
Curry leaves
3 large potatos cut into quarters
Mixed spices - 1 cinnamon stick, 1 cardamon, 3 starnise and 7 cloves
1 tsp fennel seeds
Pounded mixture - 5 cashew nuts and 3 candle nuts
Masala mixture - In a bowl, mix 2 tb mutton masala, 2 tb fish masala, 2 tsp ginger garlic paste and
                            some water
1 cup water
Salt for taste

Method:

1) In a pan of about 2 tsp oil, add the chicken pieces and fry them lightly. The fried chicken should be
    pale white.
2) Add about 3 tb of oil in a pan. When the oil is hot, add mixed spices and fennel seeds and saute
    well.
3) Add onion and saute well.
4) Add curry leaves.
5) Add pounded mixture and masala mixture. Saute well.
6) Add about 1 tsp salt. Add a bit more if you find that the mixture lacks salt. Saute well for about 5 -
    7 minutes.
7) Add the potato pieces and tomato pieces and mix well for about 3 minutes.
8) Add 1 cup water. Mix them well.
Ingredients

9) Transfer the mixture into the pan that contains the fried chicken. Let the whole chicken curry cook
    under medium flame boiling for about 20 minutes until the potato pieces becomes soft.

Chicken ketchup

Ingredients:

1) Ginger garlic paste
2) Chicken pieces (small)
3) Salt
4) Dark sauce (thick)
5) Dark sauce (watery)
6) Vinegar

Method:

1) Add ginger garlic, salt and mix with chicken. Fry them for 15 to 20 min
2) After frying, remove some oil from the pan and to the chicken mixture, add 1tb dark sauces and 1 tb vingear. Add some water. Let the entire mixture be cooked for 5 minutes before turning off the stove

Chicken pirattal

Ingredients:

1) I cinnamon stick
2) Cloves
3) Star anise
4) 1 Onion
5) Curry leaves
6) Baba's meen masala
7) Chicken pieces
8) White pepper
9) Ginger garlic paste
10) Salt
11) 1 tsp fennel seeds

Ingredients:

1) In a pan, add cinnamon, staranise, cloves, fennel seeds and saute well
2) Then add sliced onion, curry leaves
3) Add Baba's fish masala paste and mix them well. Make sure the masala is cooked well for about 7 to 10 minutes until you see a change in colour
4) Add chicken pieces, white pepper, ginger garlic paste and salt and mix them well
5) Let the entire mixture be cooked for about 10 to 15 min by covering the lid.

Black pepper Sauce fish

Ingredients

Salmon
Black pepper sauce
Lemon juice

Method:

1) Marinate the cut salmon pieces with black pepper sauce overnight.
2) Mix the marinated salmon pieces next day with lemon juice and grill them well.

Hint: You can grill the salmon, add french fries and some boiled baby carrots & brocoli as western food lunch....

Fish Curry

Ingredients:
1 tsp urad dhal
1 tsp fennel seeds
1 tsp fenugreek seeds
1 tsp mustard seeds
curry leaves
1 onion

1st plate (mix them well to form a paste)
Ginger garlic paste
Baba's chilli powder
A bit of water

1 brinjal
1 - 2 tomato
Tarmarind juice

Fish

Method:
1) In a pan, add oil. Add urad dhal, fennel seeds, fenugreek seeds, mustards seeds, curry leaves and finely cut onion and saute them well.
2) Then add the mixture found in plate 1 and saute them well.
3) Then add the brinjal and tomatoes.
4) Add the tarmarind juice.
5) Add extra water to your desired amount. Let the entire mixture be cooked well until it boils.
6) Once the mixture has been cooked well, add fish. Let it cook for another 7 min .

Fish Puttu

Ingredients
1 tsp mustard seeds
1 tsp urad dhal
1 tsp fenugreek seeds
1 tsp ginger garlic
1 onion
curry leaves
2 green chillis
1/2 - 1 tsp turmeric powder
I egg
I fish ( prefer shark)
Coconut grating
Coriander leaves
Pinch of salt

Method:
1) Steam the fish and tear the cooked fish into smaller pieces and place it in a container
2) In a pan, add some oil. Add mustard seeds, urad dhal, fennel seeds and saute them well.
3) Add ginger garlic paste, onion, curry leaves and chilli. Saute the mixture well.
4) Add turmeric, salt and let the mixture cook well.
5) Shift the mixture to a side and add 1 beaten egg .. Make sure that the egg is well cooked by scrambling it well.
6) When the egg mixture has been cooked, add the cooked fish. Mix them well for a minute.
7) For taste, add cocnut gratings and mix them well.
8) Add coriander leaves to the mixture and mix them well. This is for garnishing purpose.
