Ghee Rice

Ingredients:

1 cup rice soaked in water for 1/2 hr
2 bay leaves
1 cinnamon stick broken into halve
3 cardamon
5 cloves
A pinch of fennel seeds
Raisins and Cashew nuts roasted in ghee
1 onion cut into halve
1 tsp salt

Method:

1. Take 1/2 onion and slice vertically into long thin strips and cook them in ghee oil until they are brown.
    Leave them aside. They should be crispy after they cool down.

2. In the same pan, add bay leaves, cinnamon stick, cardamon and cloves and saute them well.

3. Add the other 1/2 chopped onion and saute them well until the onion becomes transparent.

4. Add the wet rice (remove the water) and salt and let the whole mixture be cooked for 2 minutes under
    low flame.

5. Add slightly less than 1.5 cups of water and cook until the mixture starts to boil. Once it starts boiling, turn
    off the stove and transfer the whole mixture into a rice cooker. Let the rice be cooked.

6. Once the rice is cooked, add the roasted raisins, cashew nuts and fried onion strips and mix them well. It
     is ready for serving.

Note: For 1 cup rice, you use 1 tsp salt
        : Since the rice was already soaked in water, use less than 1.5 cup of water to ensure that the rice is not
          soaky.
