Paranggikaai Kootu (Pumpkin Kootu)

This is one recipe which i love from my mom! She makes excellent dish with pumpkin. Whenever I feel like eating, I will cook and pack for next day's work.

Ingredients:

1) 1 Onion
2) 1 tb ginger garlic paste
3) Pinch of asafoetida
4) Curry leaves
5) Diced pumpkin
6) 1 tsp cumin powder
7) 1 tsp chilli powder
8)  Pinch of turmeric powder
9)  3/4 tarmarind juice
10) Sugar (3 tb as per your taste)
11) Salt

Methodology:

1) Saute onion, ginger garlic paste, pinch of asafoetida, and some curry leaves.
2) Then abt 2 min later, add diced pumpkin. Saute the pumpkin for 1 min.
3) Then add 1 tsp cumin powder, 1 tsp chilli, little turmeric and 3/4 cup tarmarind water. Let it cook.
     If water evaporates quickly, add more water under low flame.
4) Once its cooked, add abt 3 1/2 tsp sugar. Saute again the mixture and let it cook for like another 2 to 3 min adding a pinch of salt .Turn off the flame :)
