Pushanikkai (Ash Gourd) Kottu

Ingredients:

1) Ash gourd
2) Bengal gram dhal
3) Coconut milk
4) 2 green chilli
5) 1 tsp cumin seeds
6) 1 tsp rice
7) Turmeric powder
8) 1 tsp salt
9) 1/2 tsp mustard seeds
10) 1/2 onion finely chopped
11) Curry leaves

Method:

1) Cut ash gourd into smaller pieces
2) Cook bengal gram dhal till soft
3) Grind coconut milk, 2 green chillis, 1 tsp cumin seeds, and 1 tsp rice into fine paste.
4) In a pan, add the ash gourd, pinch of turmeric powder, 1 tsp salt, and add enough water to just cover the ashgourd pieces. Cook the pieces well.
5) Once cooked well, add cooked bengal gram dhal. Allow the mixture to boil for 3 - 5 minutes
6) Season with mustard seeds, onion and curry leaves.
