Amma's Mutton Pirattal

Ingredients:
1 kg mutton
1 onion diced
3 onions grinded
Curry leaves
1 tsp fennel seeds
1 cinnamon stick
4 pieces of starnise
1 bay leaf
Masala mix - 5 tb Baba's mutton masala, 2 tb Baba's fish masala, 1 tb ginger garlic paste and some
                      water.
Grinded nuts - Cashew nuts, almonds and 6 candle  nuts
2 diced tomatoes
White pepper
Coriander leaves
Salt

Method:

1) In a heavy bottom vessel, add pieces of mutton, 1 tsp ginger garlic, some water , 1 tsp salt and cook the mutton for 45 min to 1 hr until the mutton becomes soft.
2) In a pan, add 1 diced onion, curry leaves and saute well.
3) Add  3tb grinded onion
4) Add 1 tsp fennel seeds, 1 cinnamon stick (broken into 4 pieces) and 4 staranise (broken into halves), and 1 bayleaf and saute well.
5) Add the  masala mix to the spice mix and saute well.
6) Add grinded nuts and saute well. Make sure the masala mix don t gets stick to the pan. If it sticks to the pan, add more oil.
7) Add 2 tsp salt and continue sauting. Saute until the raw masala smell goes away for abt 10 min.
8) When the masala mix changes colour , add 2 diced tomatoes and cooked mutton.
9) Add 1/2 tsp salt and white pepper and let the entire mutton pieces be cooked for another 15- 20 minutes.
10) Garnish the mutton with coriander leaves before serving.
