Aviyal - Keralite cuisine

Since it was my Mother's Day, i decided to cook something special for my mom. I have observed thid dish served in many temples before.

Ingredients:

Vegetables:
1 Plantain
Yam
2 potatoes
1 carrot
1 drumstick

Grind to paste:
3 green chillis chopped
1 packet yogurt
1/8 tsp turmeric powder
1.5 tsp cumin seeds
1 cup coconut cubes
1 tsp basmatic rice soaked in water for at least for 1 hr
1/2 tsp salt


Curry leaves
Coconut oil

Method:
1) Cut the vegetables 1 inch in length.
2) Throw the potatoes, carrots and drumsticks into the pot of water and cook the veges in water for abt 6 min.
3) Add the plantain and yam and coof for another 8 mins.
4) Now, add the grinded paste and cook well.
5) In a separate pan, add some coconut oil and saute the curry leaves well before transfering the cocout - curry leave mixture into the pot. U can contro the amount of oil added into the mixture.
6) Add another 1/2 tsp salt for taste and cook under heat for another 5 min before serving.
