Amma's Mint coriander tuvaiyal

My mom used to make tuvaiyal a lot when we were younger and she used to emphasize on the importance it has on our stomach! I hate the restaurant version and this tuvaiyal is tastier given its home made and its much healthier!


Ingredients:

1 green chili slit
5 garlic teeth cut halved
1 small ginger chopped
1/2 onion chopped
2 tb grated coconut
Mint leaves
Some coriander leaves
4 small tamarind pulps / 1 yellow lemon
3/4 tsp salt

Method:

1) In a pan, add oil. Add green chilli, ginger, garlic, and onion and sauté them well. Once sauted well,
    remove them and place it on a plate and let the cooked mixture be cooled.
2) In the same pan with the same oil, add the coriander leaves, mint leaves, salt and grated coconut.
    Saute them well for 1 - 2 minutes.
3) Turn off the stove and let the green vegetables be cooled.
4) In a blender, add the ginger mixture and green vegetables along with a small amount of tamarind
     or lemon juice and blend them thick. Store them  in fridge.
